Ube Pancakes

Ube is a purple yam which has a vibrant purple flesh. This root vegetable is a native of philippines and has a sweet, nutty flavor which is mostly used in desserts. I used these yams to make a creamy purple sauce called ube sauce which has a beautiful purple color.

I started off by pressure cooking the yams in my instant pot. After they cooled down, I mashed them and combined it with coconut milk and condensed milk along with some other ingredients to make this silky purple dream sauce. This versatile sauce is perfect for drizzling over pancakes, waffles and ice creams. The coconut milk adds richness, condensed milk adds the indulgent sweetness along with a hint of vanilla which ties it all together.

Procedure for Ube sauce

  • In a Pan , combine the boiled and mashed ube, coconut milk, and condensed milk and coconut oil.
  • Heat this mixture over medium heat, stirring it frequently for 10- 15 minutes.
  • Add sugar and vanilla extract and cook for another 10 minutes until the sauce thickens.
  • Remove from heat and let it cool down.
  • Make sure that there are no lumps in the sauce.
  • You can also blend this sauce in a blender to make it smooth and silky.
  • The sauce thickens as it cools down.
  • Add more coconut milk if required. This sauce can be stored in an airtight container for up to a week.

Procedure for Ube pancakes

  • Combine all purpose flour/ gluten free flour, almond flour and ube.
  • Make sure there are no lumps in ube. Use a blender if required.
  • Now add the egg, vanilla extract, baking soda, coconut milk /regular milk.
  • Use water to make it in to a smooth batter.
  • Make the pancakes using coconut oil.
  • Drizzle generously with some ube sauce over these warm ube pancakes and top it with some fruits of your choice.

  • Boiled and mashed ube 1 cup
  • Coconut milk 1 cup
  • Condensed milk 1/2 cup
  • Coconut oil/ butter 2 tbsp
  • Brown sugar 2 tbsp (optional)
  • Vanilla extract 1/4 tsp

Ingredients for Ube pancakes

  • All purpose flour 1 cup
  • almond flour 1/4 cup
  • Boiled and mashed Ube 1/2 cup
  • Egg 1
  • baking soda 1/2 tsp
  • vanilla extract 1 tsp
  • coconut milk/ regular milk 1/2 cup
  • water as required
  • berries and bananas
