This breakfast scramble is a staple in my home for years. It’s a healthy and flavor-packed breakfast that keeps you full for longer. This scramble is loaded with colorful vegetables, fluffy eggs, and creamy avacado for a satisfying meal to start your day.
I use my cast iron pan to saute the baby potatoes and vegetables. To speed up the process, I pre-cook the baby potatoes until they become slight soft. The rest of the roasting I finish in my cast iron pan along with other vegetables.
I saute the baby potatoes first until they are crispy on the outside and tender inside. Then I add all other vegetables. A colorful medly of bell peppers, onions, mushrooms, jalapenos, cherry tomatoes and spinach is then tossed in. Then I add a few slices of avacado for some healthy fats and mix in the fluffy cooked eggs.
For seasoning, I use salt, pepper, oregano and a hint of chilli powder( optional). Finally, a sprinkle of mexican cheese melts into the mix, creating a creamy & cheesy finish.
This is a perfect combination of protein, fiber and healthy fats for a happy morning. And yes, we also have this for our Sunday brunches!


Ingredients (serves 4)
- Eggs 8
- Red/ Yellow baby potatoes About 8-10
- mushrooms 1/2 cup
- onions 1/4 cup
- Red/Yellow bell peppers 1/2 cup
- Jalapeno’s 1
- spinach hand full
- Cherry tomatoes 16
- Salt
- Black pepper powder 1 tsp
- Oregano 1 tsp
- Chilli powder 1 tsp
- Cheese ( Mexican blend) 1/2 cup
- Avacado 1 sliced for topping
- oil 2 tbsp
Procedure
1.Slice the baby potatoes into halves and pre cook them in a microwave for 2 minutes. This makes the cooking faster.
2. Heat oil in a cast iron skillet over medium heat and cook the potatoes until the skin is crispy and inside is soft and keep them aside.
3. Then add in the onions, Jalapeno’s, mushrooms, peppers and spinach, cook for 2 minutes and add the roasted potatoes back in the skillet.
4. Now add the spinach, and the seasonings according to you preference and spice level.
5. I like to cook the eggs seperately and add them to the skillet.
6. Finally mix in the spinach and wait until it wilts. Then top it with cherry tomatoes, avacado slices and some generous amount of cheese. Wait until the cheese melts and serve it hot.
Serving suggestions
For some extra protein, you can add black beans or chicken.
You can eat it as a scramble or serve it with a toast or make it into a burrito. Add some hot sauce or salsa or sour cream.
Note: Cherry tomatos and avacado slices not shown in the picture. I usually add them after plating.
