Overnight oats are a simple and delicious breakfast you can make ahead and enjoy the next morning by adding toppings of your choice. It’s healthy, easy to make and endlessly customizable and always satisfying. I like to top it with almond butter and fruits of your choice. I added sliced bananas, berries, pomegranate seeds, pumpkin seeds, some homemade granola, toasted walnuts and Manuka honey.
This wholesome overnight oats is a nourishing blend of oats, chia seeds, almond milk, almond butter and pumpkin seeds which are soaked overnight for a perfectly creamy texture. Greek yogurt adds richness and protein, while a dash of cinnamon brings the warmth to every spoonful.

Why I like to use Manuka honey
Manuka honey is a special type of honey produced in New Zealand from the nectar of the Manuka bush. This honey is expensive compared to the normal honey due to its limited supply and production. The Manuka bush blooms for only 2 to 6 weeks each year and must be harvested during this short window. This honey has numerous health benefits.

Ingredients:
- Old fashioned Oatmeal 1/3 cup
- Chia seeds 1 tbsp
- Pumpkin seeds toasted 1tbsp
- Greek yogurt 1/4 cup
- Milk of choice 1/2 cup
- Cinnamon powder 1tsp
- Almond butter or any other nut/seed butter of choice 1 tbsp
- Banana slices,Berries of your choice, pomegranate
- Stevia/ Manuka honey/ maple syrup or any other sweetener of choice
- Toasted walnuts
Procedure:
In a glass jar or an air tight container, soak the oatmeal in the milk of you choice. I often use home made almond milk. Add greek yogurt, chia seeds, cinnamon powder, almond butter and pumpkin seeds. Mix everything well and refrigerate overnight. Next day morning add banana slices and berries, granola, toasted walnuts and top it with a spoon of Manuka honey which isn’t just sweet but also healing! Enjoy!
