This Mexican bean salad is simple and easy to make dish which is perfect for gatherings. This salad is a colorful, protein packed dish bursting with fresh flavors. It’s brings together a hearty mix of black beans and cannellini beans, sweet corn and peppers. The red and green peppers adds the crisp, which is a perfect balance of textures.
Finely chopped red onion and jalapeno add just the right amount of zest and heat, while the fresh cilantro brings a bright herbal note. The salad is tossed with avocado oil/ extra virgin olive oil, freshly squeezed lemon juice, a touch of sugar and a blend of cumin, chilli powder, garlic, black pepper and salt.

Procedure
1.Prepare the Vegetables:
Finely chop red and green peppers, onion, and jalapeno. Rinse and drain the beans and thaw the corn.
2.Make the dressing :
In a small bowl, add avocado oil, lemon juice, cumin, chili powder, garlic, black pepper, salt and sugar.
3.Combine everything:
In a large mixing bowl, add black beans, cannellini beans, corn, red and green peppers, red onion and jalapeno.
4.Toss and mix:
Pour the dressing over the salad and gently toss until everything is mixed and the dressing is evenly coated. Adjust the salt and spices according to your taste.
5.Toppings:
Finally add cilantro and any other toppings like crushed tortilla chips/ cherry tomatoes/ avocado chunks .Refrigerate for at least 30 minutes before serving to allow the flavors to blend.
