These Ferrero Rocher inspired truffles are a delightful, healthier twist on the classic treat. Made with fresh roasted hazelnuts, naturally sweet dates, pure maple syrup and cacao, each truffle brings a burst of flavor in every bite. For these truffles use Medjool dates or any other soft variety dates. Medjool dates are naturally soft and chewy which are a good source of fiber and nutrients.
Procedure
- Blend the hazelnuts in a food processor or a blender until they are fine. If you prefer a chunky texture do not make them into a fine powder.
- Add in the soft dates and blend them until well combined scraping the sides. This mixture will be sticky.
- Now add the cacao powder, maple syrup, vanilla extract and melted coconut oil which is at room temperature.
- Blend everything again until well combined and reaches a dough like consistency.
- Adjust the sweetness according to your taste.Add more maple syrup if needed.
- Now grease your hands with coconut oil and form the truffles.
- Take a small portion of the dough and roll them between your palms. Don’t forget to put the surprise hazelnut in the centre.
- Roll each truffle in crushed hazelnuts.
- Place in the refrigerator for 30 minutes if you prefer them firm.
- You can prepare them ahead of them and store in an airtight container. Enjoy!
