These Strawberry Banana Crepes are so delicate, they almost melt in your mouth. They are a delightful treat prefect for breakfast, brunch or dessert. These crepes are filled with sweet bananas and juicy strawberries adding a burst of fresh fruit flavor in every bite.

Crepes are so versatile and can be served sweet or savory. Sweet crepes might be filled with fruit, chocolate, or jam, and topped with powdered sugar, whipped cream, or sauces like chocolate or caramel. Savory crepes are often filled with ingredients like cheese, meats or vegetables, making them perfect for any meal.
Procedure
- In a bowl, whisk together the flour, eggs, melted coconut oil, vanilla extract, sugar, salt and milk until smooth. Make sure the batter is free of any lumps.
- You can also use the blender. Add all the ingredients to the blender and blend it until smooth for about 25-30 seconds.
- Allow the batter to rest for 30 minutes.
- Heat a non stick pan and apply few drops of coconut oil. Then wipe it with a paper towel.
- Pour about 1/2 cup of batter and spread it thin.
- Cook the crepe on both sides for about 2 minutes.Use a spatula to carefully flip the crepe to the other side.
- Transfer the crepe to a plate and repeat the process to make more crepes.
- Cut strawberries and bananas into thin slices and add them to the centre of the crepe.
- Drizzle some chocolate & caramel syrup and roll up the crepe.
- Again drizzle more chocolate & caramel syrup on the top and add a dollop of cool whip. Dust it with some powdered sugar and serve warm.
Tip
If the batter is thick, add 1 tbsp of milk or more. The batter consistency should be thinner than pancake batter and it should spread easily on the pan.
You can also make these crepes with gluten free flour.

- Salt 1/4 tsp
- Milk 1 1/2 cup

- Melted coconut oil/ Butter 2 tbsp

- Chocolate & caramel sauce
- Powdered sugar
