Pumpkin French Toast

Written by

·

This pumpkin French toast is a warm, cozy, fall-inspired breakfast that combines the rich flavors of pumpkin and spices with the comforting texture of French toast. Thick slices of French toast bread are soaked in a creamy pumpkin mixture made with milk, pumpkin puree, pumpkin spice, cinnamon, vanilla, and a hint of brown sugar. The bread is then cooked in butter to until golden brown.

Each slice is topped with a drizzle of maple syrup, adding a natural sweetness, and dusted with powdered sugar. Fresh strawberries and blueberries provide a burst of color and a refreshing contrast, balancing the warm, spiced flavors of the French toast. This dish is an indulgent, seasonal treat that celebrates the flavors of fall in every bite.

This recipe comes together as a pumpkin-spiced French toast that’s more nutrient-dense than classic versions like French toast, thanks to the addition of pumpkin and balanced ingredients.

From a nutrition standpoint, the pumpkin puree is a standout—it’s rich in vitamin A (from beta-carotene), which supports eye health and immunity, along with fiber for digestion. The eggs provide high-quality protein, healthy fats, and essential nutrients like choline, which supports brain function. Milk contributes calcium, protein, and vitamin D for bone health. The warm spices—pumpkin spice and cinnamon—add antioxidants and may help with blood sugar regulation and digestion.

The bread serves as the main carbohydrate source, giving energy, especially if you use whole-grain varieties for added fiber. Cooking with a small amount of butter or coconut oil adds flavor and helps with satiety, though it also increases calories. Strawberries and blueberries bring natural sweetness, vitamin C, and antioxidants that support overall health and reduce inflammation.

Sweeteners like brown sugar, maple syrup, and powdered sugar enhance taste but contribute added sugars, so they’re best used in moderation. Overall, this dish offers a good balance of carbohydrates, protein, and fats, along with important vitamins and antioxidants—making it a more wholesome, satisfying breakfast when portion sizes and added sugars are kept in check.
