Loaded Nachos

These loaded nachos are an ultimate indulgent snack, perfect for a cozy movie night or a warm evening treat. They have a base layer of crispy nachos topped with cheddar/ Mexican blend cheeses. For the protein, I added black beans. You can substitute black beans with cooked seasoned chicken or you could totally make it without beans or chicken. Then I layered it with freshly diced onions, juicy tomatoes, spicy and tangy pickled jalapeños and creamy chunks of Avocado. A sprinkle of red pepper flakes and cumin adds the flavor and a spicy kick and smokiness that ties everything together. I did not add any salt as the nachos were already seasoned with salt. These loaded nachos are ready in less than ten minutes and are perfect for sharing.

Procedure

  • Take a microwaveable plate and spread it with a generous layer of store bought nachos.
  • Wash and rinse the canned black beans and remove all the excess water. Pat them dry and add them on the nachos.
  • Then add the first layer of cheese and microwave for 30-40 seconds until the cheese is melted.
  • Take it out from the microwave and add diced onions, tomatoes, jalapeños, avacado chunks, red pepper flakes and cumin and freshly chopped coriander.
  • Now add more cheese on the top and microwave it for one minute covered with another plate or lid until all the cheese is melted. If the cheese didn’t melt, microwave for 30 more seconds.
  • Enjoy it warm!

Ingredients

  • Nachos enough to fill the plate
  • Canned black beans 1/2 can
  • Cheddar/Mexican four cheese blend as desired
  • Chopped onions 1/4 cup
  • Chopped Tomatoes 1/4 cup
  • Pickled Jalapeños chopped or whole as desired
  • Chopped avocado chunks 1/3 cup
  • Red pepper flakes 2 tsp
  • Cumin powder 1 tsp
  • chopped coriander (optional)
