This vibrant veggie skillet brings together red baby potatoes, mushrooms, sweet colorful bell peppers all sauteed with fresh spinach.Feel free to add any other vegetables of your choice.I like to add broccoli, sweet potato and scallions. I also added scrambled eggs for some extra protein.Seasoned with salt, black pepper powder, red chilli powder or chilli flakes and cumin, each ingredient shines with natural flavor. I finished this with a handful of spinach and cheese and Everything bagel seasoning. This dish has a delightful crunch and extra layer of flavor in every bite.

Ingredients
- red and yellow baby potatoes 12
- mushrooms 1 pound
- orange and red peppers 2
- spinach 2 handfuls
- eggs 4
- salt 1 tsp
- black pepper powder 1tsp
- red chilli powder/ red chilli flakes 1 tsp
- cumin powder 1 tsp
- cheese
- Everything bagel seasoning( if you do not have this seasoning you can use onion and garlic powder OR you can add finely chopped garlic and diced onion)
Procedure
- Start by roasting the baby potatoes until the skin turns crispy and inside is done. Transfer them in a separate bowl.
- In the same skillet add mushrooms and bell peppers. Sauté them for 2 minutes.
- Now add 2 handfuls of spinach and mix it until it is wilted.
- Scramble eggs in a separate pan and season it with salt and pepper.
- Now add the crispy potatoes and scrambled eggs to the pan.
- Season it with salt, red chilli powder and cumin.
- Finally add cheese and Everything thing bagel seasoning.
